MUSHROOM TOAST FOR AN UNREASONABLY GOOD LUNCH ============================================= Serves 2. Slice 300 g mushrooms. Warm a large frying pan over medium-high heat, add 1 tbsp olive oil, and spread the mushrooms out. Leave them alone for 3 minutes, then stir and cook until browned. Add 15 g butter, 1 finely chopped garlic clove, and a few thyme leaves. Stir for 30 seconds. Add 2 tbsp water and 1 tsp soy sauce; let it bubble down. Taste before adding salt. Toast 2 thick slices of bread. Spread each with soft cheese or butter and pile the mushrooms on top. Finish with black pepper and chopped parsley. Optional: top with a cooked egg. Use a pan wide enough that the mushrooms brown instead of steaming. One frying pan, two pieces of toast, and a very good lunch. — BeaKindOfOrganized
